Grown on north-facing slopes of Saddlehill Vineyard, the Cabernet Franc thrives in rocky, well-drained soils that foster concentrated tannins and herbal complexity. Hand-harvested fruit ferments with indigenous yeast in small stainless steel vats, then spends 14 months in 30% new and 70% neutral French oak barrels. This regime preserves the grape's signature red-pepper, tobacco leaf and ripe strawberry aromatics while softening structure. The finished wine showcases a balanced interplay of savory herbal streaks, cherry compote and a clean, persistent finish.
